Virus definitions are considered a "standard change" same as security patches to a pc, they are usually pre-authorized and part of daily operations, but still need to be documented. Like no one has ever had machines crash or applications stop working after a virus definition update. Agreed: Best practice in an enterprise environment is to go through the standard change process. A/V updates can be controlled centrally with tools such as ePolicy Orchestrator, so any updates can be delayed and released once the approval and certification occurs.
