The entry in the routing table [S* 0.0.0.0/0 [1/0] via 10.10.3.2] means that if there is not any other entry for a destination network in the routing table, just forward it to the next hop 10.10.3.2. Meaning that all unknown packets will go to that address, which is the simplest way to configure routing. However do not forget that the other end (Head Office) also needs to know the way back to 10.10.20.0/23, in order to have full communication.
